simple mussels with linguine
1 kilo of mussels
1 tin of plumb tomatoes
1tsp of basil
black pepper
tomato paste 50g
100ml of water
olive oil
two cloves of garlic
1 small onion
honey
Tabasco
packet of dried linguine
Fry the onion (finely cut) and garlic (crushed) off in a pan of olive oil
once they have softened add the the tinned tomatoes (use a knife inside the opened tin to break the bigger bits up)
put in the basil and pepper in and tomato paste and Tabasco (about 1/2 teaspoon)
simmer in the pan for 20 mins and top up the lost liquid with the water
(this actually makes a nice soup if you don't add so much water lol)
cook the linguine and clean the mussels (remove the beards and scrub the shells, discard any mussels which are damaged or wont close )
add the honey and mix in well
toss in the mussels and heat until they open wide (mix the in the pan)
(discard any that don't open)
serve the linguine and spoon the mussels on to with plenty of sauce on top
should serve 2-3 or one really hungry bloke who like mussels lol
