THIS WEEK'S DRINK: The MOJITO 3 fresh mint sprigs, torn 2 tsp crushed palm sugar 1 lime 1 1/2 oz light rum club soda Add the rum, sugar and mint to a shaker and lightly crush the mint with the back of a spoon. Add the juice of the lime plus the lime pieces to the shaker plus some ice and shake. Pour the mix into a collins (tall) glass (no straining!!) and top up with soda. The mojito is a classic drink in Cuba, having its origin in the cane fields, where workers were provided with large barrels of sugarcane juice to drink after a hot day cutting sugarcane. On Saturday nights, the plantation owners would spike the guarapo with a little aguardiente, a crude form of rum; thus began a long tradition of Saturday night Cuban parties. As time went on, the workers began adding yerba buena, a type of mint leaf, to the barrel for flavor. It can be difficult to find, but fresh spearmint works equally well! Sweet and tart at the same time, the mojito is a classic drink which is becoming more popular of late. Great for those hot summer evenings...Give it a try!!

THIS WEEK'S DRINK: The MAI TAI 1 oz Fine Jamaican Rum (15 or 8 year old) 1 oz Martinique Rum (St. James) 1/2 oz Orange Curacao 1/2 oz Orgeat Syrup Juice from one fresh lime Shake all ingredients except the Martinique Rum together with several ice cubes in a shaker. Strain into a double rocks glass and then float the dark rum on top. Garnish with a sprig of fresh mint and serve. Originally invented at 'Trader Vic's' Polynesian restaurant in Oakland, California in 1944, it was created for some visiting Tahitian friends of the owner. Upon tasting it, one of them cried "Maita'i Roa!", meaning "Out of this world!" - thus, the Mai Tai was born. These days the Mai Tai has many different recipes, ranging from those very close to the 'original' (as above) to 'grab some light rum, dark rum and mix it with a bunch of juices and stick a cherry on top'. Beware though - any drink with even a HINT of pineapple is not a true 'Mai Tai'. Stick to the original and the best!

THIS WEEK'S DRINK: The VODKA MARTINI 1 1/2 oz vodka 3/4 oz dry vermouth Shake vodka and vermouth together with several ice cubes in a shaker. Strain into a cocktail glass, garnish with an olive and serve. The drink made popular by the Bond films, James Bond's 'shaken, not stirred' vodka martini (actually known as a 'Vesper' after one of the characters from Casino Royale) is still as classy today as it was in the days of Dr. No. and Ursula Andress. Give it a try!
