There are no cheese curds in Australia? If you do find some make your own... Add the greasy fries, then the cheese, and then pour over the super hot BBQ gravy, to melt the cheese.. stir a bit and enjoy. You can use chedar if you are really stuck.. LOL :) Here is one on me!
