Will's potato based fish cake. with an oriental twist.

3med or 2 large potatoes
1 fillet of fresh tuna or salmon diced
2 egg yolks
spring onion chopped
handful coriander chopped
1" cube ginger finely chopped
1 stick lemongrass finely chopped optional
seedless red chili chopped (wash hands well)
flower egg and breed crumb

first peel and cut potatoes bring to the boil from cold and simmer for 8-10 mins until cooked. Drain well and return to the pan. dry them further over the heat, mash and add chopped veg. season and taste all the way.
then add the diced raw fish and 1-2 eggs depending on how dry, then a spoonful of flour if necessary. make into desired shape. big or small is good.
then refrigerate while you beat an egg and a splash of milk- season. then a plate of flour- seasoned. then a plate of breadcrumbs/oats and seeds(sesame is nice)-season.
then pat each cake in flour then egg then crumb. pan fry until golden brown and finish cooking in a medium oven. taste!
serve with sweet chili sauce. enough for 2.
you can freeze the raw cakes and defrost quiet easily.

1-2 large potatoes
a handful of grated cheddar
a few sage leaves and chives chopped
1 beaten egg and seasoning and a little flour
grate the potato last (so it doesn't go brown) and squeeze out the water. mix in the other ingredients and a little flour to bind.
dollop the mix in a hot oily frying pan turn when brown and finish the cooking in a hot oven (the potato takes a while).
they're called floddies and they're yummy
